Lemon and Olive Oil Cookies

Ingredients

  • 150 g (¾ cup) sugar + 50g (¼ cup) for sprinkling
  • Grated zest of 2 limes
  • 315 g (2¼ cups) flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch salt
  • 165ml (⅔ cup) Serjella Extra Virgin Olive Oil
  • 1 egg
  • ½ tsp almond extract
  • Juice of 2 limes

Preparation

  1. Place the sugar and lemon zest in a bowl and mix together with your fingertips to flavor the sugar then set aside.
  2. In a separate bowl, sift together the flour, baking powder, baking soda and salt and set aside.
  3. Whisk the olive oil into the sugar using an electric mixer then whisk in the lemon juice, almond extract and egg.
  4. Add the flour mixture, beating over low speed until well combined. Cover the bowl and leave resting in the fridge for 1 hour at least.
  5. Preheat the oven to 180°C and line a baking sheet with parchment paper.
  6. Place the ½ cup of sugar in a bowl and set aside then take two teaspoons of the cookie dough and shape them into balls then roll them into the sugar.
  7. Place the cookie balls on the baking sheet and flatten them with your hand. Bake the cookies for 8-10 minutes in the preheated oven.
