Lemon and Olive Oil Cookies

Ingredients
- 150 g (¾ cup) sugar + 50g (¼ cup) for sprinkling
- Grated zest of 2 limes
- 315 g (2¼ cups) flour
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch salt
- 165ml (⅔ cup) Serjella Extra Virgin Olive Oil
- 1 egg
- ½ tsp almond extract
- Juice of 2 limes
Preparation
- Place the sugar and lemon zest in a bowl and mix together with your fingertips to flavor the sugar then set aside.
- In a separate bowl, sift together the flour, baking powder, baking soda and salt and set aside.
- Whisk the olive oil into the sugar using an electric mixer then whisk in the lemon juice, almond extract and egg.
- Add the flour mixture, beating over low speed until well combined. Cover the bowl and leave resting in the fridge for 1 hour at least.
- Preheat the oven to 180°C and line a baking sheet with parchment paper.
- Place the ½ cup of sugar in a bowl and set aside then take two teaspoons of the cookie dough and shape them into balls then roll them into the sugar.
- Place the cookie balls on the baking sheet and flatten them with your hand. Bake the cookies for 8-10 minutes in the preheated oven.
