Chicken Tagine with Olives

Ingredients

  • 2 whole chicken (2 kg)
  • 2 tsp ground ginger
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tbsp olive oil
  • 2-3 onions, cut in half and sliced
  • 4 garlic cloves, crushed
  • ¼ tsp turmeric
  • ¼ tsp saffron
  • 250 ml (1 cup) water
  • 250 ml (1 cup) chicken stock
  • 1 cinnamon stick
  • 1½ cups pitted green olives
  • 2 tbsp preserved lemon
  • 2 tbsp lemon juice
  • 8 tbsp fresh parsley, finely chopped
  • 4 tbsp fresh coriander, finely chopped

Preparation

  1. Clean the chicken under cold water then pat dry completely. Cut the chicken into pieces.
  2. In a bowl, combine the ginger, cumin, coriander and use half of this mixture to rub all over the chicken.
  3. Preheat the oven to 220°C.
  4. Heat the olive oil in a tagine or a large ovenproof pot and cook the chicken until nicely browned. Remove the chicken and set aside on a plate.
  5. Add the onion and garlic to the same pot and cook until onion is soft.
  6. Add the turmeric and saffron along with the remaining mixed spices. Cook for a minute then add the water, chicken stock and cinnamon stick.
  7. Add the chicken and bring to the boil then cover and transfer the pot into the preheated oven. Cook for 1¼-1½ hour.
  8. Once the chicken is cooked, remove the pot from the oven and stir in the lemon juice, preserve lemon, and olives. Finally sprinkle the parsley and coriander on top.
