Mushroom Salad

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 400 g fresh mushrooms, cut in thin slices
  • 2 shallots or small onions, finely chopped
  • ½ bundle of parsley, finely chopped
  • ½ tbsp oregano
  • Salt and pepper to taste
  • Hot paprika to taste

For the dressing:

  • 2-3 tbsp lemon juice
  • 1-2 tbsp olive oil

Preparation

  1. Heat the olive oil and butter in a pan.
  2. Add the mushrooms and stir for a few minutes, until the water has evaporated. Then turn the heat down.
  3. Add the shallots or onions, parsley and oregano, and stir for another 2 minutes.
  4. Add salt, pepper and paprika to taste.
  5. Drizzle some lemon juice and olive oil and serve.

Tip: Serve on a bed of lettuce with some boiled potatoes and you have a perfect light main dish.
