Ingredients
- 1 cup canned cannelini beans
- 4 tbsp extra virgin olive oil
- 85 g smoked turkey, diced
- 4 cloves of garlic, crushed
- 1 medium onion, chopped
- 2 medium potatoes, cut into 1 cm cubes
- 2 tbsp tomato paste
- 5½ lt (22 cups) water
- 2 fresh pay leaves
- 1 courgette, chopped
- 1 large carrot, chopped
- 1 celery stalk, chopped
- 1 small cabbage, cored and shredded
- 1 Swiss chard, shredded
- 2 tbsp salt
- 225 g dialini pasta
Preparation
- In a food processor, combine the smoked turkey, garlic and 2 tbsp olive oil and pulse to make a fine paste.
- Heat the remaining 2 tbsp of olive oil in a large pot and add the smoked turkey paste and cook for about 4 minutes.
- Add the onion and cook until soft, about 3 minutes.
- Add the potatoes and cook for another 3 minutes, until they begin to stick to the bottom of the pan.
- Push the vegetables to the side and make a well in the center. Add the tomato paste in the well and stir for 2 minutes.
- Return the vegetables to the center of the pot and stir well to coat them with the tomato paste.
- Add the water, bay leaves, carrot, celery, courgette, cabbage, Swiss chard, salt and white beans, bring to a boil then cover and cook for about 1¼ hours until all the vegetables are tender.
- Meanwhile cook the pasta in salted boiling water and add to the soup just before serving.
