Carrot and Coriander Soup

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 tsp ground coriander
- 450 g carrots, peeled and sliced
- 1¼ lt (5 cups) vegetable stock
- 4 tbsp of fresh coriander, chopped
- Salt and black pepper
Preparation
- Heat the oil in a large saucepan and sauté the onion until soft and translucent.
- Add the ground coriander, carrots and stock and bring to the boil. Reduce the heat, cover and cook for 20 minutes until the carrots are tender.
- With a hand blender, puree the soup until smooth.
- Season with salt and pepper and cook for 5 more minutes.
- Stir in the fresh coriander and serve.
