Greek Cake with Olive Oil

Ingredients
- 500 g (2½ cups) sugar
- 350 g (2½ cups) flour
- ½ tsp salt
- 1 tbsp baking powder
- 250 ml (1 cup) Serjella extra-virgin olive oil
- 180 ml (¾ cup) orange juice
- 2 tbsp Greek yogurt
- 4 eggs
- 1 tsp. vanilla extract
- Grated zest of 1 lemon
- 2 tbsp powdered sugar for garnish
Preparation
- Brush the cake pan with some vegetable oil and preheat the oven to 170°C.
- In a bowl , place the sugar, flour, salt and baking powder and stir to combine.
- Add Serjella olive oil, orange juice, yogurt, eggs, vanilla and lemon zest then whisk until well combined.
- Pour the cake batter into the cake pan and bake in the preheated oven for 40-50 minutes.
- Leave the cake cooling in the pan then unmold and sprinkle some powdered sugar on top for garnish.
