Grilled Courgettes with Pine Nuts

Ingredients
- 4 courgettes
- 70 g (½ cup) pine nuts
- 6 tbsp balsamic vinegar
- 3 tbsp olive oil
- 2 sprigs of thyme
Preparation
- Slice the courgettes lengthwise using a vegetable peeler.
- Heat 1½ tablespoons of olive oil in a frying pan and grill the courgettes with the thyme.
- Heat the balsamic vinegar in a small saucepan and leave it simmer until it reduces by half. Remove the pan from the heat and add the rest of the olive oil and season with salt and pepper.
- Toast the pine nuts in a dry frying pan until nicely golden brown.
- In a bowl, mix the courgettes, pine nuts and drizzle the balsamic vinegar dressing over. Gently toss to combine.
