Spinach with Raisins and Toasted Pine Nuts

Ingredients
- 1½ kg spinach
- 2 tbsp olive oil
- 3 garlic cloves, thinly sliced
- 2 tbsp pine nuts, toasted
- 2 tbsp raisins
- Salt and pepper to taste
- Juice of ½ lemon
Preparation
- Soak the raisins in water until plumped then drain and set aside.
- Heat the olive oil in a frying pan and sauté garlic until soft.
- Add the raisins and cook for a minute.
- Add pine nuts and lemon juice.
- Stir in the spinach and cook until wilted.
- Season with salt and pepper to taste.
