Spinach with Raisins and Toasted Pine Nuts

Ingredients

  • 1½ kg spinach
  • 2 tbsp olive oil
  • 3 garlic cloves, thinly sliced
  • 2 tbsp pine nuts, toasted
  • 2 tbsp raisins
  • Salt and pepper to taste
  • Juice of ½ lemon

Preparation

  1. Soak the raisins in water until plumped then drain and set aside.
  2. Heat the olive oil in a frying pan and sauté garlic until soft.
  3. Add the raisins and cook for a minute.
  4. Add pine nuts and lemon juice.
  5. Stir in the spinach and cook until wilted.
  6. Season with salt and pepper to taste.
