Lemon & Garlic Roast Chicken

Ingredients
- 1 whole chicken (~1.2 kg)
- 5 sprigs of thyme
- 1 sprig of rosemary
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and black pepper
- 1 lemon, halved
- 2 lemons, cut into quarters
- 3 garlic heads, halved crosswise
Preparation
- Preheat the oven to 200°C.
- Rinse the chicken with cold water inside and out then pat dry.
- Season with salt and pepper the chicken inside and out
- Stuff the cavity with thyme, rosemary, 2 halves of a lemon, and 2 halves of the garlic.
- Tie the chicken legs with a string
- Mix the olive oil, garlic and paprika in a small bowl and brush the chicken.
- Put the chicken into a roasting pan, scatter the lemons quarters and the rest of the garlic halves around the chicken.
- Roast for 1 hour. To test if the chicken is cooked, prick with a knife between the leg and the thigh, the juice should run clear.
- When the chicken is cooked, turn the oven off and leave the chicken resting for 10 min with the door slightly open.
