Carrot with Olive Oil

Ingredients

  • 8 garlic cloves, thinly sliced
  • 2 onions, finely chopped
  • 8 carrots, peeled and sliced
  • 100 ml (⅓ cup + 1 tbsp) extra virgin olive oil
  • Salt and white pepper
  • 1 tbsp fresh coriander, chopped

Preparation

  1. Heat the olive oil in a large pan over medium heat and sauté onion and garlic.
  2. Add the carrots and cook for 15 to 18 minutes over low heat, stirring from time to time.
  3. Season with salt and pepper to taste.
  4. Garnish with coriander and serve with bread.
