Artichoke with Olive Oil

Ingredients
- 8 garlic cloves, thinly sliced
- 2 onions, halved and thinly sliced 4 mm thin
- 8 fresh artichoke hearts, sliced 4 mm thin
- 1 green pepper, seeded and sliced
- 1 red pepper, seeded and sliced
- 100 ml (⅓ cup + 1 tbsp) olive oil
- Salt and white pepper
- 1 tbsp fresh coriander, chopped
- Plain yogurt to serve
Preparation
- Bring a large pot of water to the boil and cook the sliced artichoke hearts for a minute.
- Heat the olive oil in a separate pot over medium heat and sauté onion and garlic until soft.
- Stir in the artichoke hearts, cover and cook for 10 minutes over low heat.
- Taste and make sure the artichoke are fully cooked.
- Add the sliced peppers and cook for a minute.
- Season with salt and pepper to taste.
- Transfer to a serving dish and let it cool.
- Garnish with fresh coriander and serve with Lebanese bread and plain yogurt on the side.
